Your ideal Mario Kart

Picture this:
You're tasked to make a new Mario Kart game, in which all royalties will be paid to you.
You get to choose which features from older games return, as well as courses from past installations.
The only catch is, you can only choose 32 courses that make the return.
What courses would they be, and if possible, what new original courses would you add?

Interesting scenario.

That would be very tough, especially for the fact that I only played the original Super Mario Kart.

About the courses, do I get to draw the map and scan it for your viewing pleasure?

I would pick the features from the original SNES version, like one player, two players, time attack, and deathmatch.
