The real privacy dashboard for Windows

Haven't done this in a while, so bear with me...

Dia, a diagram "drawer" or "editor," either of these may fit. It's pretty easy to use, like Microsoft Visio, and, just like Visio, has plenty of built-in shapes, making the diagramming process easy.
One more thing that does emulate Visio is that it can download more symbols using another tool, but I think it's only for Windows. Am I right? It's 3AM here so just too lazy and unaware.

Very good software, ports for Linux or via Wine do exist for sure if I remember right . Confirmed macOS via Brew version works well too! Long live free software!

Unfortunately, though, and I should have pointed this out, it is discontinued, as the last version was released in 2011, almost ten years in the past.
Nevertheless, it is a great program and still practical in today's world.

Good for bookhunting if you're on windows. Unfortunately noone has made a mac or linux port yet but I reckon it will work in wine if you manage to install the .NET framework needed

.NET Framework for Wine? I believe it's Mono for Wine that comes as an install option when you first start up Wine.
